CASS’ KITCHEN :: CHARRED ENDIVE SALAD WITH LENTILS + RADISH

endive and lentils recipe_1

When I latch on to an ingredient that I like, I tend to find tons of different ways to use it. This summer, one of those ingredients was endive. I love the somewhat bitter crunch it has, and how the size and shape is so perfect for entertaining too! So, I put it in salads, I […]

CASS’ KITCHEN :: WATERMELON + COCONUT CRÈME

watermelon and coconut creme recipe cocokelley1

If you’ve been following my adventures the last few days, you know that I’ve been touring around through the Okanagan Valley in B.C. and by touring I mean eating and drinking to my heart (and belly’s) content.  I can’t wait to share more from the trip with you all (soon soon!) but in the meantime, […]

CASS’ KITCHEN :: SUMMER WATERMELON SALAD

summer watermelon salad recipe cocokelley3

Some of us are blessed with the ability to open the fridge, pull out a few ingredients and whip up something decently (or sometimes surprisingly!) tasty. Growing up with a chef for a father, I’d like to think that I inherited a bit of this ability. And it seems - judging by requests on instagram when I […]

Love this salad. Looks delicious. I make a similar one with black olives in place of the blackberries. The salt in the olives compliments the watermelon well.

I’m reall into watermelon at the moment!
As I live in italy its so hot and watermelon is so refreshing!
This combination looks amazing with the feta and mint. I don’t know if I can get blackberries where I am, is there another berry that would work well?
    Many thanks!

COCKTAILS AT SIX :: THE RUBY ROUSER

the ruby rouser cocktail recipe coco kelley_2

Last week’s cocktail recipe installation started a bit of a trend for me, I think: creating drinks inspired by my favorite summer adventures and pastimes. This week? In homage to many a day sitting on the deck by the lake lately… I give you The Ruby Rouser. First off, you have to know that this […]

COCKTAILS AT SIX :: THE BELLA ROSA

Cass_Cocktail_196

What’s more inspired than a summer cocktail? A cocktail inspired by one of my favorite summer destinations of course! It’s been three years now since my last escape to the Amalfi Coast, but I can still imagine myself sipping on something cool and refreshing, sitting high up on the cliffs overlooking the sea… So, I pulled out a favorite indulgence […]

    This looks gorgeous, so refreshing!
Any ideas of a substitute for the rose lemonade?
I live in a beautiful mountain town in northern Italy so the prosecco (my favourite)! and the limoncello are not a problem but I don’t think rose lemonade has hit the streets of Borgotaro yet! Any ideas?
