Confession: I’m a lazy cocktail maker. Yes, I love a creative, well-crafted libation as much as you do. I also love ordering them at a bar where they have all those crazy ingredients that go into drinks these days that I just don’t happen to keep handy! So, I thought I’d let you in on my favorite way to whip up a summer cocktail. There’s just one secret: SORBET.
Step one: head to your local ice cream shop or specialty grocery store and seek out the sorbet flavor that sounds the best to you. Try something a little adventurous!
We were inspired by Cupcake Royale’s Rhubarb Rose sorbet that I had picked up while at the farmer’s market (their shop is on the same street!), and I decided to add a little ginger to it as well, so I purchased some rhubarb stalks, some ginger, and made a quick batch of simple syrup…
2 stalks rhubarb, diced
1 piece of ginger root, chopped
1 cup sugar
1 cup water
Bring ingredients to a boil and then simmer for about 15 minutes, until rhubarb starts to break down. Strain through a fine mesh strainer, then let chill.
So, you can see how you should let the sorbet ingredients inspire you – Strawberry Basil, Lemon Lavender… something a little herbal and fruity always works well! But here comes the best part. Putting it all together is so easy.
Rhubarb Ginger Sparklers:
1 Bottle Prosecco or dry sparkling wine of choice
1 Pint Rhubarb Sorbet
Rhubarb Ginger Simple Syrup
Add 1 oz simple syrup, and top with prosecco. Use a melon baller to make tiny sorbet scoops to float on top! If you want to kick things up a notch, you can also add in 1 oz of vodka or gin to give your sparkler some kick!
The most effort in this recipe comes from the simple syrup, but it’s fun to get creative with those because once you make them you’ll have plenty leftover to keep using in cocktails or recipes! But the best part of this recipe to me is getting inspired by everyone’s favorite summer ingredient – ice cream!
