Now, unless you're actually hosting a Swamp-themed Halloween party like ours, you may not want to give such a delicious drink such an atrocious name. In this case, however, it fit quite nicely. But, if you'd like to give it a proper name, we'll call it the Spiced Pear Flip...
If you're feeling so bold, you might even choose to garnish it with a rubber snake for the occassion. Regardless, we're pretty sure this is one cocktail recipe you're going to want to add to your fall repertoire...
The Spiced Pear Flip // serves one
- 1½ oz. gin
- ¾ oz. rosemary + clove infused simple syrup
- 1½ oz. pear puree
- ½ oz. White Whale Filthy Liar (or a lychee syrup or liqueur)
- ¾ oz. lemon juice
- 1 egg white
- 1 sprig rosemary, to garnish
To start, you'll need to make the simple syrup and the puree...
Rosemary & Clove Simple Syrup:
- ½ cup sugar
- ½ cup water
- 1 oz. whole cloves
- 3 sprigs rosemary
Combine the sugar, water, cloves, and rosemary in a saucepan over low heat. When the mixture reaches a boil, remove from heat and let sit for 30 minutes. Strain into a jar and store in the refrigerator, or use right away. This will yield more than enough syrup for two drinks.
- 1 pear, peeled and pitted
- ½ oz. lemon juice
- ½ tsp. fresh rosemary
Slice the pears and add to the lemon juice and rosemary in a blender. Blend until smooth, then strain mixture through a fine-mesh sieve and discard any solids. Pear juice can also be substituted here, but be sure to infuse with lemon juice and rosemary overnight.
While the prep may take a little extra effort, I assure you it's completely worth it. And now - to finally make the cocktail!
Combine all the ingredients as listed above (minus the garnish) in a cocktail shaker over ice. Shake vigorously until chilled. Pour into a lowball glass, and garnish with a rosemary sprig.
If you prefer your egg whites extra fluffy (as we do) then feel free to whip them up using a blender and top the cocktails as you make them with a solid dose of whites. (You can omit them from the shaker!)
The clove and rosemary simple syrup is the real winner in this cocktail - the clove combined with the pear is heavenly. In my experienced-cocktail-drinker opinion. We loved the idea of creating a frothy (known as a flip) cocktail for our swamp theme but you could easily omit the egg whites depending on your taste for them, and keep sipping this delicious concoction all through the chilly months ahead.
